Sausage & Rice Casserole

Image
*On a personal note ~ When I lived at home, with my parents before I was married.  My Mom would always let us choose what we wanted for dinner on our birthdays and she would prepare it for us.  This is what I would choose almost every year!  It doesn't look or sound that amazing, however it is very good!!  My Dad raised registered Charolais (for those of you who are not familiar, they are beautiful big white cows!)  We had beef and we just took having beef steak, roasts, and such for granted!  So, as a girl who thinks 'beef is whats for dinner'.  Even though it isn't beef, it sure is a favorite! Thanks Mom and Dad!!  We were always spoiled!!!! Sausage & Rice 1 1/2 lb of sausage ~ We like the Jimmy Dean hot variety.  (With no preservatives.) 2 cup chicken broth  (I use Swanson with no MSG) 2 1/2 cups water 1 cup rice 2 stalks celery ~ chopped 1/3 cup onion ~ chopped 1 teaspoon salt 1 teaspoon pepper Brown Sausage in a large skill...
