Easy, Flavorful Hashbrowns

Oh, potato lovers you are going to love this! Wash a bunch a potatoes, coat them with olive oil to make them fluffy and sprinkle them with Kosher salt.  Poke them, so they don't explode and bake them like baked potatoes.  When cool I just put them in the fridge on the same pan I baked them on until I'm ready to use them. Add some olive oil to a skillet to coat it.  Heat the pan while cutting up the potatoes and through them in.  I added a little McCormick Grill Mates, Montreal Steak seasoning for a little flavor and color.  Just whatever you like.  Brown potatoes.  They are great here, but I have ham. . . I cut up a couple of slices of spiral cut ham and added it . . .YUM.   This is good here too, but wait! Most everything is better with cheese.  I added cheese right at the last to let it melt up on top.  This is a pretty quick way to make delicious homemade hashbrowns.  Hope you try it. Super Soft Caramel Popcorn

Super Soft Caramel Popcorn 2 1/2 cups brown sugar 1 cup light corn syrup 1 cup butter or margarine dash of salt 1 14 oz can sweet & condensed milk 1 teaspoon vanilla Large bowl of popped corn or puffed rice cereal~ 1.  Combine sugar, corn syrup, butter, and salt in medium sauce pan: bring to a boil. 2.  Reduce heat to medium and stir in milk; cook, stirring constantly to soft ball sate (240 degrees) 3.  Remove from heat then stir in vanilla. 4.  Pour slowly over popcorn stirring until caramel is evenly distributed. 5.  Store in covered container.

Stuffed Cheese Hamburgers Press the hamburger out into thin patties Sprinkle with Salt and Pepper Sprinkle finely chopped onion over hamburger Place a generous amount of cheese on top of hamburger Put another thin hamburger patty on top then press around the edges until sealed Fry until cooked through And you have a stuffed Cheese-burger Enjoy!

Mom's Crunchy Dumplings

This is another great recipe from Mom. Thanks Mom! Brown together: 2 lbs. hamburger salt and pepper 1 Tbsp. flour 2 cans water 1 chopped onion 2 cans creams of chicken soup Simmer together for a few minutes pour in 9X13 top with dumplings. Dumplings: 2 cups flour 4 tsp. baking powder 1 cup milk 1/2 tea. salt 1/2 tea. poultry seasoning 1 tea. dry onion 1/2 tea. celery seed 1/2 cup melted margarine cut shortening into flour and seasonings, add milk (make dough wet).  Dip teaspoons of dough into melted margarine.  I rolled mine in plain Planko bread crumbs.  Put on top of meat mixture.  I then sprinkled the left over bread crumbs from my bowl on top. Cheese Cream Sauce Dip For Bread

Cheese Sauce Bread You may use any kind of bread you like.  I used the bread shown in above picture.  French bread also works well. 1 Cup Cream 2 Tablespoons Butter 1 Tablespoon garlic powder 1/2 teaspoon salt 1/8 teaspoon pepper Stir constantly and bring a slow boil until it reduces to the consistency you like.  Then add 3/4 cup cheese of your choice. Stir until smooth.  Mozzarella works really well. Pour over sliced bread and let set for about 5 minutes. Enjoy!

Egg Salad Sandwich

We do this from time to time through out the year, but always at Easter to use up the eggs.  The guys love it! Boil eggs, cool, peel and add to bowl.  Mash with a fork, but not to fine.  Add a squirt of mustard and spoonful of relish.  Add miracle whip to cream it all together.  I don't have any measurement, I just doing this according to how it looks.  The guys always love it. . .I guess that makes it fool~proof!  This was spread on toasted bread. Carrot Cake

Carrot Cake    This recipe is from my husband's grandmother.  She was famous in the family for this cake.  I don't pretend to make it as well as she did.  But my Hubby really does enjoy it whenever I bake it! It's another lovin from the oven  recipe. 3 cups of flour (sifted) 2 cups of sugar 1 1/2 cups cooking oil 2 teaspoons soda 2 teaspoons cinnamon 4 large eggs (beaten) 3 cups raw rated carrots 1 cup chopped nuts 1 cup raisins Mix dry ingredients, add oil, and beaten eggs, add carrots, raisins, and nuts. Bake at 350 for 30 minutes or until toothpick comes out clean. Frost with Cream Cheese Frosting Cream Cheese Frosting
